Sukurunde
Sukurunde or Sukur Unde is a Goan sweet typically prepared on the auspicious day of Gudi Padwa. Gudi Padwa is New year according to the Hindu calendar. Sukurunde is made up of Bengal gram that is chana dal and jaggery. Balls are dipped in rice batter and deep fried making for a lip smacking sweets is served. It is very delicious and fast to cook.
Ingredients:
1 and 1/2 cup Chana Dal (Bengal Gram)
1 and 1/2 cup jaggery
1 cup freshly scrapped coconut
1/4 teaspoon salt
1/2 teaspoon cardamom powder
2 and 1/2 tablespoon maida (all purpose flour)
Turmeric Powder
Oil or Ghee to fry
Preparation:
1. Wash and soak chana dal overnight
2. The next day pressure cooker the soaked chana dal with 3 cups of water and a pinch of turmeric for 4 to 5 whistles
3. Check if the dal is soft and mushy
4. In a thick bottom pan take the chana dal add jaggery, freshly scrapped coconut, cardamom powder, pinch of salt and cook on a low flame till the mixture thickens
5. Keep stirring the mixture to avoid sticking at the bottom of the pan
6. When the mixture is almost dry switch off the flame and let it cool. This is called Puran that is the filling
7. In a bowl take maida (all purpose flour) and add some water to make a smooth batter (medium consistency batter), add pinch of salt
8. Make small ball of puran and keep aside
9. Heat oil/ ghee in a wok
10. Dip each Puran balls in maida batter and slowly drop it in hot oil. You can use a spoon if you want
11. Fry on low flame till you get golden yellow color of the puran balls
Sukurunde are ready

Serve hot Sukurunde with desi ghee (clarified butter)
