Sukurunde
Sukurunde or Sukur Unde is a Goan sweet typically prepared on the auspicious day of Gudi Padwa. Gudi Padwa is New year according to the Hindu calendar. Sukurunde is made up of Bengal gram that is chana dal and jaggery. Balls are dipped in rice batter and deep fried making for a lip smacking sweets is served. It is very delicious and fast to cook. Ingredients: 1 and 1/2 cup Chana Dal (Bengal Gram) 1 and 1/2 cup jaggery 1 cup freshly scrapped coconut 1/4 teaspoon salt 1/2 teaspoon cardamom powder 2 and 1/2 tablespoon maida (all purpose flour) Turmeric Powder Oil or Ghee to fry Preparation: 1. Wash and soak chana dal overnight 2. The next day pressure cooker the soaked chana dal with 3 cups of water and a pinch of turmeric for 4 to 5 whistles 3. Check if the dal is soft and mushy 4.
