Ghontache Sansav

Ghontache Sansav is a delicious ripe mango curry with sweet, mildly spice and slightly tangy flavor. This is a Goan vegetarian curry served as a main course without onion and garlic. The curry is made with grated coconut and spices to which ripe mangoes are added. Ghontache Sansav is a Goan one age old dish which belongs traditionally to Goud Saraswat Brahmins vegetarian cuisine.

Ghotan are ripe mangoes commonly found in Goa. They are small, mangoes have to be peeled and mashed to get the pulp. Sansav means mustard seeds and where these are combined in one recipe we get Ghontache Sansav.

Recipe 1

Ingredients:

6 Ghonta (small ripe mangoes)

4 dry chili

2 tablespoons jaggery

1 cup desiccated coconut

Turmeric

1 teaspoon coconut oil

Asafoetida

1 tablespoon Mustard seeds

Salt to taste

Preparation:

1. Peel the ripe mangoes and extract the pulp 

2. Grind desiccated coconut, chilies, turmeric and water into fine paste

3. Add ripe mango seeds, pulp, salt, jaggery and the mixture in the utensil and keep it on medium flame, let it cook for 15-20 minutes

4. Take a small pan add asafoetida, mustard seeds in coconut oil and let it splutter

5. Add this tadka in the dish and turn off the flame 

Ghontache Sansav is ready to eat

Recipe 2

Ingredients:

6 Ghonta (small ripe mangoes)

4 dry chili

2 tablespoons jaggery

1 cup desiccated coconut

Turmeric

1 tablespoon Mustard seeds

Salt to taste

Preparation:

1. Peel the ripe mangoes and extract the pulp 

2. Take a small pan add mustard seeds once it starts to splutter turn off the flame 

3. Grind desiccated coconut, chilies, turmeric and water into fine paste

4. Add mustard seeds to the mixture and give it a grind

5. Add ripe mango seeds, pulp, salt, jaggery in the mixture and mix it well

6. Check the taste and consistency 

Ghontache Sansav is ready to serve
